Burgers and Basketball




Most of us know that Jaiden loves sports. He can now say a few "sports words", such as: baseball, basketball, football(aka buttball), golf(golk), touchdown, nice throw, nice shot, pass, hoop, and his new one, soccer(shocka). Yeah, he has a problem with the letter F. Right now it's kind of a good thing if ya know what I mean. We love that he is all boy! At the moment he is very obsessed with basketball. He plays everyday... we are just hoping one day all of his energy can get us some sweet money.

Tonight we had an awesome dinner! One that would make my dad, the Hamburger King, proud. I made sourdough buns with flaxseed, garlic burgers with grilled onions and avocado, and mini cheesecakes. I am having so much fun cooking and I feel like I get better everytime I try something new. It's safe to say I have bread-making down to an art. I feel like I am saving a ton of money making everything from scratch. Also, thank you Kristin D.! I made peanut butter this week and it turned out great!!

Mini cheesecakes with cinnamon graham crust and cinnamon shortbread crust. Super easy!!

Jaiden loved my hamburger more than I did. He kept coming over saying, "bite...bite." I'm glad
he would eat it with all the crazy things that were on it.

Great News...

We just hit our three year mark and Dal planned the best anniversary ever! We had so much fun... it was nice to have that much time to ourselves.




Some really great news... I have the easiest and smartest child ever! Since I now have a ton of free time I decided to change Jaiden's crib into a bed. I would rather have him climb out of a bed than try to monkey himself out of a crib. So, he grabbed a screw driver and tried to help. When all the work was done he climbed up into his bed and looked at me with a cheesy grin. He knew he was a BIG BOY.

Test round #1 (nap time) was a super success! He went right to sleep and didn't even roll out of bed. I love this perfect crazy little boy!!

Honey Bear Bakery White Chocolate Brownies

Preheat oven to 350*

1/2 cup butter (do not substitute)
8 ounces white chocolate chips
8 ounces semi-sweet chocolate chips
2 large eggs
1/2 cup sugar
1/2 teaspoon vanilla
1/2 teaspoon salt
1 cup flour

Melt butter in saucepan over low heat. Remove from heat and add 4 oz. white chocolate. DO NOT STIR!

In large bowl, beat eggs until frothy. Add sugar, vanilla, salt and mix well. Add butter/white chocolate mixture. Mix until just combined. Add remaining white chips and semi-sweet chips.

Pour into greased 8 by 8 pan. Bake 350* for 30 minutes.

I hope you all enjoy this super awesome recipe. It's really easy to change or add to it if you want to mix it up a bit.

Blondie


I finally started baking like a maniac again and boy, does it feel great! This lil beauty is now my #1 favorite dessert! I liked it so much that I had to take pictures. It's a white chocolate "brownie" with semisweet chips. I'm actually planning on twisting it up a bit and making a black and white brownie... now that sounds good.

I think I have created a MONSTER...

...so Jaiden discovered a new found love of cold cereal. I thought, "hey, it's easy and has some nutritional value, right?" So, I started planting him on the couch at 6:30 in the moring with Sesame Street, milk milk and his new favorite food. It's starting to become quite the problem though since he knows where it is and how to get it at anytime he wants. Come lunch time he is so hopped up on Honey-Comb that his pb&j sounds totally yucky. Ok, I know this sounds bad... but I promise I feed my child normal, somewhat healthy food.
Today it had to be Trix... and all over. I turn my head to blog for one minute and it happened. This kid is crazy. He loves not only to eat it but to hold on to sticky handfuls of it for what seems like hours. As you can see, once he noticed it wasn't coming off of his fingers he started to get a little uncomfortable. So by the time I had cleaned up the mess on the floor he had flung his hands around so fast that tons of tiny Trix were now all over the front room. Whatever... I just laughed and took pictures. I love being a mom!

So, after all the mess and we are in a "controlled" situation all he has to do is flash that goofy little smile and look at me with those pretty blues and I think how thankful I am for him and Dal. I love them more than they realize... and it just keeps getting better.

Growin' up...

I am so amazed at how fast time goes by. It really feels like I was in the hospital(with a newborn) a week ago. This month my lil boober turns the BIG 1! What happened to that tiny lil baby that used to let me hold him all day long?




I know there are moms that like certain stages of age, but I have to say I LOVE IT ALL! Each month something new and exciting would happen. A smile... then a laugh... sitting up and then crawling. I can't wait for what lies ahead. I know some of the funniest and most exciting years are just around the corner. I'm just excited to know that I'll be able to do it all over again!! I love being a mom more than anything and I'm so happy that we have such an amazing and wonderful little boy who loves us so much.






Jaiden loves getting in the tub... and he loves his sharky towel. I remember when we finally got to ditch the infant tub and just stick him in and let him sit on his own. Boy, that was great! Now he just stands up and throws all of his soaking wet toys out onto the rug... not so great.
